Bolo triplo de Nutella e panquecas de avelã | Triple layer Nutella and hazelnut pancake cake

(scroll down for English)

Gratidão. Imensa.

Feliz 2014 :)

Bolo triplo de Nutella e panquecas de avelã

1 chávena avelãs inteiras
2 c.sopa açúcar baunilhado
1+1/2 chávenas farinha T-55
2 c.sopa fermento em pó
1 c.chá sal
50g Becel líquida
1 chávena Kefir
2 ovos XL, temp. ambiente
1 c.chá aroma de baunilha
Nutella
Avelãs cortadas
Crocante de amendoim

Tostar as avelãs numa frigideira. Remover do lume e deixar arrefecer.
Empilhar as panquecas e servir.

Gratitude. Immesurable. This is how we end 2013 and beggin 2014.
Grateful for all the good things that happened to us. And also for the lesser good ones as we always learn some valuable lesson from it. As in "what doesn't kill you makes you stronger".
Grateful for the people of our heart that proudly walk side by side with us, helping us grow and becoming better persons. Grateful for the new people, whom we hope are here to stay. Grateful for the ones who parted ways, as they were not meant to be.
Grateful for the bright sunny days and for the stormy and rainy ones.
Grateful for the health of all those we love and who love us back.
Grateful for the all the holidays and trips, alone or in good company, for the great discoveries, for the breathtaking landscapes and for the delicious meals.
Grateful for all the experiencies and for accomplishing many of the proposed goals.
Grateful for the good surprises that came our way, making us oh so very happy.
And very grateful for having you, on the other end of the screen whom, many times, come into our lives in the form of comments, suggestions, messages, phonecalls, gatherings and trips.

Happy 2014 :)

Tapioca com limão e canela | Tapioca with lemon and cinnamon

scroll down for English)

Mel a gosto

In between the Holidays there's a return to normality that is much awaited. While the tables are still filled with Xmas delicacies our minds have started wondering about New Year's Eve. Therefore, it is imperative to keep our mental sanity and stop the scale from complaining about the heavy weight that climbed on top of it.

Tapioca with lemon and cinnamon

50g tapioca
250ml skimmed milk
Honey to your liking
1 small cinnamon stick
1 small stripe of lemon zest

Hidrate the tapioca with plenty water for at least 2h (mine stayed overnight). In a small saucepan, place the drained tapioca with the rest of the ingredients and cook for 5 mins after started boiling (it might be necessary to add more milk, depending on how you like your tapioca's consistency). Serve sprinkled with cinnamon powder.

Rabanadas grelhadas | Grilled French Toasts

(scroll down for English)

3 laranjas (sumo)

Xmas is just around the corner. Soon we'll be together, gathering around a table with plenty delicacies. Family traditions that pass from generation to generation or new ones that start to rise. We will tucked in, with hugs and smiles, in a warm house where there's a bit of everything. I wish everyone could just say the same thing...
The holidays are an invitation for gluttony and if some of us are a bit more controlled, others may not be so. For those who seek a healthier alternative without giving up on much, here's a recipe for grilled French Toasts (Rabanadas, in Portuguese). Yes, grilled. But the flavor is all there.

Grilled French Toasts

500ml skimmed milk (or soya, almond, rice, etc.)
1/2 small bio lemon (zest)
2 cinnamon stick
Honey to taste (agave syrup, or brown/moscovado sugar)
2 eggs, beaten
8 thick gluten-free whole bread (at least two 2 days old) slices
Brown sugar and cinnamon mix to sprinkle

3 oranges (juice)
Port wine (same amount as orange juice)
2 aniseed stars
1 cinnamon stick
Brown or moscovado vanilla sugar (or honey, agave syrup, etc.)

Boil the milk with lemon zest, cinnamon and honey. Keep aside. Beat the eggs and slice the bread. Meanwhile, heat a anti-adherent frying pan just greased with olive oil. Dip the bread in the milk until tender. Pass each slice by the beaten eggs and grill in the pan until golden on both sides. Sprinkle all slices with the sugar and cinnamon mix and place them in a large dish or large bowl.

If you like, serve the French Toasts with a syrup: boil the orange juice with Port, aniseed, cinnamon and vanilla sugar. Drizzle the French Toasts with the syrup or keep the syrup aside in a gravy boat so each person can choose between dry or moist French Toasts.

Quinoa, iogurte e fruta para o pequeno-almoço | Quinoa, yoghurt and fruit for breakfast

(scroll down for english)

Escolher o programa Compotas.

During the week time slips between our fingers. Schedule swaps, mismatched days-off, professional and personal duties that hustle us. And the tic-tac seems frantic, fleeting and when we realize it is time to wake up for another day. There's nothing better than waking up and having time for a tranquil breakfast. Hot or cold, sweet or savory, with or without fruit. This break is vital to strengthen the energies restored during the restful sleep. My relaxing 10mins: just me, and immense tranquility, silence and my breakfast. Afterwards I can finally go enter the rats race keeping my mental sanity intact! :)

Quinoa, yoghurt and fruit

Boiled quinoa
Natural greek yoghurt
Pear and vanilla jam
White grapes

To cook the quinoa, wash thoroughly with water 3 times and drain. In a saucepan place 1 measure of quinoa and 2 measures of water and leave to boil. Lower the heat and simmer until cooked. Leave to cool down.

For the jam, peel and core 5 pears, slicing them in cubes. Place the pears inside the Soup Maker, add vanilla sugar to taste and water to reach the minimum mark. Choose the Jam Program. In the end, remove most of the cooking liquid and keep it aside. With the fruit and a bit of liquid still inside the Soup Maker choose the Blender Program and blitz 4 times for 10secs each. Pour the jam into a sterilized jar.

In a bowl place 5 tbsp of cooked quinoa, 100g of greek yoghurt, pear and vanilla jam to taste and garnish with white grapes. Serve together with the remaining juice from cooking the fruit.

Hamburgueres aromáticos de couve-flor | Cauliflower aromatic burgers

(scroll down for English)

4 ovos
Iogurte grego q.b.
Micro-rabanetes Life in a Bag

In our home meals are weekly planned and of the seven dinners three are vegetarian, two are fish and the other two are meat, one read meat and one poultry (lunches are the recycling of our dinners).
Of course the weekly plan does not have to be strict: it is adaptable to our wishes, to the time we have available due to our working schedules and, many times, it is adaptable to all the generous offerings from family and friends.
Like in all houses, we repeated our favorite dishes over and over again, alongside with new ones that, sometimes, become new favorites. Like these vegetarian burgers, delicious at any time of the year and perfect for the lunchbox!

Cauliflower aromatic burgers

1 cup boiled quinoa
1 cup grated cauliflower
4 eggs
1/2 cup ground gluten-free oats
1 cup grated feta cheese
Salt and freshly ground pepper
1 tbsp dried mint
1 tbsp cried coriander
1 tbsp coriander paste
Greek yoghurt
Micro-raddishes Life in a Bag
Whole-wheat gluten-free beet bread

Beat the eggs in a large bowl and add the quinoa, cauliflower, oats, feta, the herbs and season with salt and pepper. Mix well and leave in the fridge for at least 30mins before cooking.
Grease a frying pan with olive oil and heat well. Pour 2 tbsp of batter for each burger and cook them until golden and firm to flip and finish cooking.
Serve with greek yogurt and micro-radishes Life in a Bag in a whole-wheat beet bread.

Trufas de Frutos Secos | Dried fruits truffles

(scroll down for English)

(inspiradas nesta receita)

100g figos secos
100g ameixas secas
30g de arandos secos
Água (ou vinho do Porto, Cointreau, Drambuie, etc.)
1/2 laranja (raspa)

Xmas is just around the corner. When we realize, it's Xmas' Eve and the table will be set, packed with goodies. These are days of gathering and plenty (if only everyone in the world could have this!!!). Between hugs, kisses and presents, we reach for something to nibble on. How about some truffles?

Dried Fruits Truffles
(inspired by this recipe)

100g dried figs
100g dried prunes
30g dried cranberries
Water (or Port Wine, Cointreau, Drambuie, etc.)
1/2 oranje (zest)
30g ground almond

Cut the dried fruit into small pieces and soak in water (just enough to cover the fruit) for 15 mins.
(Note: use Port wine, Cointreau or Drambuie but remenber the truffles will no longer be child-friendly)
Drain the fruit and keep the remaining liquid to use in the "rabanadas" sauce.
Grind it in a food processor, then add all the other ingredients and mix. Pick a bit of the dough and roll a small ball. If the dough is too sticky, add a bit more ground almond.
Make walnut-sized balls and coat them with some ground almonds or dip into melted dark chocolate, greated coconut, peanut crispy, cocoa, etc.
Put in the fridge to cool before serving.
