Arroz de feijão, couve e morcela | Bean, cabbage and black sausage rice

Este arroz é tudo de bom. É o conforto que falta nos dias frios, chuvosos e cinzentos. É o abraço apertado daqueles que amamos. É as mãos enrugadas da avó Nandinha enquando escolhia escolhia os feijões. O sorriso dos meus pais.
Este arroz é a lembrança dos dias passados e dos que estão para vir. É o ritual terapêutico de demolhar e cozer feijão e sentir-me 25 anos mais nova (tempo para onde foste???) na cozinha da avó Nandinha. É o cheiro a cevada acabada de fazer em casa da avó Ana nas visitas de domingo. É o sorriso do babe (será sobrinho ou sobrinha?) que vai nascer em Abril.
Este arroz é tudo. Somos nós. E vocês.


Arroz de feijão, couve e morcela

1 cebola grande, picada
3 dentes de alho, picado
Azeite
1 morcela da Guarda, sem pele, fatiada
1 couve portuguesa, em juliana
8 bagas de zimbro
500g arroz vaporizado
350g feijão maravilha, demolhado e cozido em apenas água
Sal e pimenta

Num tacho largo suar a cebola com o azeite durante 5 mins. Adicionar o alho e dourar. Colocar as fatias de morcela no azeite e "fritar" de ambos os lados. Juntar a couve e saltear durante 5mins. Adicionar a água onde o feijão cozeu com água suficiente para perfazer 1,5L, o zimbro e temperar com sal e pimenta. Assim que ferver, adicionar o arroz e mexer. Após 10mins, juntar o feijão e deixar cozinhar. Rectificar os temperos antes de servir.

This rice is the memory of the days gone by and the ones still to come. It's the therapeutic ritual of soaking and boiling beans to feel 25 years younger (time where art thou???) in grandma Nandinha's kitchen. It's the smell of fresh barley drink at grandma Ana's house on Sunday visits. It's the smile of the cute little baby (nephew or niece?) due in April.
This rice is all that. It's us. And you.


Bean, cabbage and black sausage rice

1 large onion, finely chopped
3 garlic cloves, finely chopped
Evoo
1 black sausage from Guarda, without skin and sliced
1 portuguese cabbage, Julianne cut
8 juniper berries
500g parboiled rice
350g wonder bean, soaked and boiled in water only
Salt e pepper

In a large pan, soften the onion in the evoo for 5mins. Add the garlic and mix until golden. Place the sausage slice and "fry" both sides. Add the cabbage and sautée for 5mins. Pour in the water from boiling the beans together with enough water to make 1,5L, the juniper berries and season with salt and pepper. Bring it to a boil add the rice, mixing and leave to cook for 10mins. Add the beans and finish cooking. Adjust the seasoning before serving.

Spaghetti Bolognese

Assim como quem conta um conto acrescenta um ponto, quem cozinha uma receita acrescenta um ingrediente (ou modifica qualquer coisa). Cá em casa não é diferente: há refeições que se repetem mas quase nunca da mesma forma. E cada um tem as suas versões do mesmo prato. Portanto, sintam-se à vontade para acrescentar à nossa versão os pontos que vos aprouver :)


Spaghetti Bolognese

1 cebola grande, picada
1 dente de alho, picado
Azeite
1/2 pimento vemelho, em cubinhos
1 cenoura grande, raspada
800g de carne de vitela, picada
1 lata grande (800g) de tomate pelado
500ml de polpa de tomate
1/2 copo de vinho branco 
1 pau de canela ou 1 talo de aipo, picado, ou ambos
Sal e pimenta moída na hora
200g de queijo Emmental ralado
500g esparguete sem glúten

Num tacho grande, refogar a cebola e o alho em azeite. Adicionar o pimento, a cenoura, o aipo (se for o caso) e carne, cozinhando até a carne estar dourada. De seguida, desfazer os tomates para dentro do tacho juntamente com a polpa de tomate e o vinho branco. Temperar com sal, pimenta e o pau de canela (se utilizar). Deixar a cozinhar durante cerca de 30mins, com o tacho destapado para reduzir o líquido. No final do tempo, se o molho ainda estiver um pouco líquido, adicionar 1 c. chá de amido de milho misturado numa c. sopa de sumo de limão.
Entretanto, cozer o esparguete al dente em água abundante com sal. Escorrer e juntar ao picado de carne, mexendo bem para incorporar os sabores.
Servir polvilhado com queijo ralado.

 

In the same way that one telling a story always adds some new factor, also one who cooks always adds (or changes) an ingredient. In our home its no different: there are meals that we repeat over and over again but are almost always done differently. And each of us cooks accordingly to its own style. So, please feel free to use our version and adapt it to your likings :)


Spaghetti Bolognese

1 large onion, chopped
1 garlic clove, minced
EVOO
1/2 red pepper, diced
1 carrot, grated
800g veal meat, minced
1 large can (800g) peeled tomato
500ml tomato puree
1/2 glass white wine
1 cinnamon stick or 1 celery stalk, chopped, or both
Salt and pepper freshly ground
200g Emmental cheese, grated
500g gluten free spaghetti

In a large pan, sauté the onion and garlic in evoo. Add the pepper, carrot, celery (if using) and meat, cooking until golden and soft. Crush the tomatoes into the pan together with the tomato puree and the wine. Season with salt, pepper and the cinnamon stick (if using). Leave to cook for 30mins with the lid open, to reduce the juices. By the end, if the sauce is a bit liquid, add 1 tsp of corn starch mixed in a tbsp of lemon juice and mix very well.
Meanwhile, cook the spaghetti al dente in plenty boiling and salty water. Drain and mix well in the mince to incorporate the flavors.
Serve sprinkled with grated cheese.
