Massa, pesto e tomates | Pasta, pesto & tomatoes

Por cá uma boa parte das férias já se foi (daí a ausência!) e o trabalho consome o cérebro e o corpo como se fosse quase um incêndio. Resta o yoga para ajudar a descontrair e a relaxar, assim como os fins de semana de absoluta preguiça, esticada na espreguiçadeira e debaixo do guarda-sol da varanda. Sair ao final do dia para espairecer na praia e na esplanada, jantar com a família e os amigos e assim se recuperam as energias para mais uma semana de trabalho. Ah, e as refeições super simples e descomplicadas, com aquilo que já está no frigorifico ou que vem da mercearia na esquina. Porque mesmo quem gosta de cozinhar também precisa de uma folgazinha!

Massa, pesto e tomates

Pesto

300g folhas de manjericão
1 dente de alho
1 mão cheia de avelãs
1 limão (sumo)
125g de queijo cheddar
Sal
Pimenta moída na hora
Azeite qb

Colocar todos os ingredientes do pesto e 50ml de azeite num processador e misturar até obter uma pasta. Se for necessário, acrescentar mais azeite até obter a consistência desejada (prefiro o pesto bem espesso e com pouco azeite).

500g massa (lírios)
500g tomate cereja (mistura de vermelhos e negros)
Pesto a gosto
Creme balsâmico
Flor de sal
Pimenta moída na hora

Cozer a massa em água abundante com sal, até estar al dente. Escorrer, reservando uma chávena da água de cozedura. Misturar o pesto na massa e ir deitando, colher a colher, a água reservada até que a massa esteja totalmente envolvida pelo pesto que, com a ajuda de alguma (pouca!) água fica um molho cremoso.
Adicionar parte dos tomates em quartos e envolver.
Para servir, colocar a massa no prato, adicionar mais tomates, regar com um pouco de creme balsâmico e temperar com a flor de sal e a pimenta. Comer quente ou frio!

Around here a good part of the holidays has gone by (hence my absence!) and work is consuming my brain and my body has is it was a fire. At least yoga helps to relax, as well as the lazy weekends, spent lying on the beach chair under the parasol in the balcony. Going out at the end of the day, for the beach of to a nice terrace, dinner with family and friends and that's how I've been managing to recover for the working weeks. Ah, and the simple easy meals, with what's left in the fridge or what is found at my grocery, also help. Because even people o love to cook do need a little break from it!

Pasta, pesto & tomatoes

Pesto

300g basil leaves
1 garlic clove
1 handful of hazelnuts
1 lemon (juice)
125g cheddar cheese
Salt
Freshly ground pepper
Evoo to taste

Place all the pesto ingredients with 50ml evoo in a food processor and whizz until it becomes a paste. If, necessary, add more eve until you have the desired consistency (I prefer a thick and less greasy pesto).

500g pasta (lilies)
500g cherry tomatoes (red and black)
Pesto to taste
Balsamic glaze
Fleur de sell
Freshly ground pepper

Boil the pasta in abundant water with salt, until it's al dente. Drain, keeping a cup of the cooking water. Mix the pesto in the pasta, adding one spoonful of the reserved water at a time, until the pasta is fully coated by the now creamy pesto.
Add the quartered tomatoes and mix. 
To serve, put a few spoonfuls of pasta on the plate and cover with more quartered tomatoes. Drizzle with the balsamic glazed and sprinkle with the flour de sell and the freshly ground pepper. Enjoy warm or cold!

Conchiglie verdes | Green conchiglie

Sábado. Almoço. Duas bocas famintas. No frigorífico uma quantidade generosa de espinafres e na mente a receita da Mª João. Meter mãos à obras e, de repente, há um cheirinho delicioso que se espalha pela casa.
Sábado. Depois do almoço. Duas barrigas bem recheadas e duas pessoas muito felizes.


Conchiglie com pesto de espinafres e pistácios
(adaptado de Clavel's Cook)

500g espinafres
3 dentes de alho
1 c. chá sal
Pimenta moída na hora
80g pistácios
100g queijo da ilha ralado
120g azeite
200g queijo Emmental ralado
500g Conchiglie tricolores sem glúten

Num robot de cozinha colocar 1/3 dos espinafres, o alho, o sal, a pimenta, os pistácios, o queijo e 1/3 do azeite. Processar muito bem até obter uma mistura homogénea. Adicionar mais 1/3 de espinafres e de azeite e voltar a processar. Repetir com os restantes terços, provar e, se necessário, ajustar os temperos.
Entretanto, cozer a massa em água abundante com sal. Escorrer, devolver ao tacho e misturar bem com metade do pesto de espinafres (reservar a restante metade no frigorífico para outra refeição). Polvilhar com o Emmental ralado, com pimenta moida na hora e servir.


Saturday. Lunchtime. Two hungry people. In the fridge a generous amount of spinach and in the mind Mª João's recipe. Off we go to the kitchen and, suddenly, a delicious smell spreads around the house.
Saturday. After lunch. Two very satisfied tummies and two very happy people.


Conchiglie with spinach and pistachio pesto
(adapted from Clavel's Cook)

500g spinach
3 garlic cloves
1 tsp salt
Freshly ground pepper
80g pistachios
100g Azores Island cheese
120g evoo
200g Emmental cheese, grated
500g gluten-free Conchiglie tricolor

In a food processor place 1/3 spinach, garlic, salt, pepper, pistachios, cheese and 1/3 evoo. Process well until you have a smooth misture. Add another spinach and evoo 1/3 and process again. Repeat with the remaining spinach and evoo, taste and, if necessary, adjust the seasoning.
Meanwhile, boil the pasta in plenty salty water. Drain, return to the pan and mix with half of the pesto amount (keep the other half in the fridge for another meal). Sprinkle with the grated Emmental, season with more freshly ground pepper and serve.

Spaghetti Bolognese

Assim como quem conta um conto acrescenta um ponto, quem cozinha uma receita acrescenta um ingrediente (ou modifica qualquer coisa). Cá em casa não é diferente: há refeições que se repetem mas quase nunca da mesma forma. E cada um tem as suas versões do mesmo prato. Portanto, sintam-se à vontade para acrescentar à nossa versão os pontos que vos aprouver :)


Spaghetti Bolognese

1 cebola grande, picada
1 dente de alho, picado
Azeite
1/2 pimento vemelho, em cubinhos
1 cenoura grande, raspada
800g de carne de vitela, picada
1 lata grande (800g) de tomate pelado
500ml de polpa de tomate
1/2 copo de vinho branco 
1 pau de canela ou 1 talo de aipo, picado, ou ambos
Sal e pimenta moída na hora
200g de queijo Emmental ralado
500g esparguete sem glúten

Num tacho grande, refogar a cebola e o alho em azeite. Adicionar o pimento, a cenoura, o aipo (se for o caso) e carne, cozinhando até a carne estar dourada. De seguida, desfazer os tomates para dentro do tacho juntamente com a polpa de tomate e o vinho branco. Temperar com sal, pimenta e o pau de canela (se utilizar). Deixar a cozinhar durante cerca de 30mins, com o tacho destapado para reduzir o líquido. No final do tempo, se o molho ainda estiver um pouco líquido, adicionar 1 c. chá de amido de milho misturado numa c. sopa de sumo de limão.
Entretanto, cozer o esparguete al dente em água abundante com sal. Escorrer e juntar ao picado de carne, mexendo bem para incorporar os sabores.
Servir polvilhado com queijo ralado.

 

In the same way that one telling a story always adds some new factor, also one who cooks always adds (or changes) an ingredient. In our home its no different: there are meals that we repeat over and over again but are almost always done differently. And each of us cooks accordingly to its own style. So, please feel free to use our version and adapt it to your likings :)


Spaghetti Bolognese

1 large onion, chopped
1 garlic clove, minced
EVOO
1/2 red pepper, diced
1 carrot, grated
800g veal meat, minced
1 large can (800g) peeled tomato
500ml tomato puree
1/2 glass white wine
1 cinnamon stick or 1 celery stalk, chopped, or both
Salt and pepper freshly ground
200g Emmental cheese, grated
500g gluten free spaghetti

In a large pan, sauté the onion and garlic in evoo. Add the pepper, carrot, celery (if using) and meat, cooking until golden and soft. Crush the tomatoes into the pan together with the tomato puree and the wine. Season with salt, pepper and the cinnamon stick (if using). Leave to cook for 30mins with the lid open, to reduce the juices. By the end, if the sauce is a bit liquid, add 1 tsp of corn starch mixed in a tbsp of lemon juice and mix very well.
Meanwhile, cook the spaghetti al dente in plenty boiling and salty water. Drain and mix well in the mince to incorporate the flavors.
Serve sprinkled with grated cheese.
