Focaccia de tomate-cereja, azeitonas e alecrim | Cherry-tomato, olive and rosemary focaccia

Tudo o que é bom demora o seu tempo. E cabe-nos esperar o tempo que for necessário para nos podermos deliciar. Os passos são poucos e simples. O descanso, esse, é grande. Uma receita para os dias em que o tempo estica até ao infinito.


Focaccia de tomate-cereja, azeitona e alecrim
(retirado de How to Make Bread por Emmanuel Hadjiandreou)

200g farinha T65
4g sal
1g fermento bio seco
150g água morna
50g azeite
1 punhado tomates-cereja cortado ao meio
2 punhados azeitonas
Raminhos de alecrim
Sal grosso

Numa tigela pequena misturar a farinha com o sal e reservar.
Numa tigela maior colocar o fermento e adicionar a água, mexendo para dissolver o fermento.
Adicionar a mistura seca à mistura líquida e misturar bem com uma colher de pau até se obter uma mistura pegajosa. Colocar 1/3 do azeite, cobrir com a tigela mais pequena e deixar levedar por 1h. Findo esse tempo, dobrar gentilmente a massa duas vezes. Cobrir com a tigela e repetir por mais 3 vezes os passos de levedar 1h, dobrar gentilmente a massa 2 vezes (adicionando um pouco de azeite para evitar que a massa cole às paredes da tigela) e cobrir com a tigela mais pequena.
No final dos ciclos de repouso a massa deve estar bem levedada e repleta de bolhas.
Transferir gentilmente a massa para um tabuleiro evitando danificar as bolhas de ar. Cobrir (com outro tabuleiro) e deixar descansar por 10mins.
Com os dedos, estender a massa até se obter um rectangulo grosseiro. Voltar a cobrir e aguardar 10mins.
Preparar os toppings e espalhá-los pela massa, pressionando suavemente com os dedos. Polvilhar com sal grosso. Cobrir novamente com outro tabuleiro e deixar levedar para o dobro - cerca de 20mins.
Entretanto, pre-aquecer o forno a 240º C. Cozer a focaccia durante cerca de 15-20mins ou até estar douradinha (para ver se estar pronta, deve fazer um som oco quando se bate no fundo). Deixar arrefecer sobre uma rede.


All that is good takes time. And it's our job to wait for as long as it takes until we can savour. The steps are few and easy. The resting time is long. A recipe for those days when time stretches infinitely.


Cherry-tomato, olive and rosemary focaccia
(from How to Make Bread by Emmanuel Hadjiandreou)

200g bread flour
4g salt
1g active dry yeats
150g warm water
50g evoo
1 handful cherry-tomatoes, cut in half
2 handfuls olives
Rosemary sprigs
Coarse sea salt

In a smaller bowl mix the flour with the salt. 
In another larger bowl put the yeast and pour the water, mixing with a wooden spoon to dissolve the yeast.
Add the dry mixture to the wet, mixing with a wooden spoon until you have a fairly sticky dough.
Add 1/3 of evoo, cover and let rest for 1h. Gently fold the dough twice. Cover with the bowl. Repeat the 1h rest, folding (and adding more evoo to prevent dough from sticking) and covering with bowl for 3 more times. 
At the end of the resting cycle the dough should be well risen and bubbly.
Gently tranfer the dough to a baking tray to avoid damaging bubbles. Cover with another tray and let rest for 10mins. 
Push the dough with your fingertips to flatten and widen it to a rough square. Cover and let rest for 10mins.
Prepare toppings and place them around the dough, gently pressing with your fingers. Sprinkle with salt. Cover and let rest until about doubled in volume - around 20mins.
Meanwhile pre-heat the oven to 240º C. Bake the focaccia for about 15-20mins or until golden (the bottom should sound hollow when tapped). Leave to cool in a wire rack.

Extracto de baunilha | Vanilla extract


Não é uma receita mas sim uma sugestão. Uma prenda bonita para oferecer. Ou simplesmente para termos em casa e utilizar nas nossas receitas. Todas as cozinhas deviam ter uma garrafinha assim :)

Conchiglie verdes | Green conchiglie

Sábado. Almoço. Duas bocas famintas. No frigorífico uma quantidade generosa de espinafres e na mente a receita da Mª João. Meter mãos à obras e, de repente, há um cheirinho delicioso que se espalha pela casa.
Sábado. Depois do almoço. Duas barrigas bem recheadas e duas pessoas muito felizes.


Conchiglie com pesto de espinafres e pistácios
(adaptado de Clavel's Cook)

500g espinafres
3 dentes de alho
1 c. chá sal
Pimenta moída na hora
80g pistácios
100g queijo da ilha ralado
120g azeite
200g queijo Emmental ralado
500g Conchiglie tricolores sem glúten

Num robot de cozinha colocar 1/3 dos espinafres, o alho, o sal, a pimenta, os pistácios, o queijo e 1/3 do azeite. Processar muito bem até obter uma mistura homogénea. Adicionar mais 1/3 de espinafres e de azeite e voltar a processar. Repetir com os restantes terços, provar e, se necessário, ajustar os temperos.
Entretanto, cozer a massa em água abundante com sal. Escorrer, devolver ao tacho e misturar bem com metade do pesto de espinafres (reservar a restante metade no frigorífico para outra refeição). Polvilhar com o Emmental ralado, com pimenta moida na hora e servir.


Saturday. Lunchtime. Two hungry people. In the fridge a generous amount of spinach and in the mind Mª João's recipe. Off we go to the kitchen and, suddenly, a delicious smell spreads around the house.
Saturday. After lunch. Two very satisfied tummies and two very happy people.


Conchiglie with spinach and pistachio pesto
(adapted from Clavel's Cook)

500g spinach
3 garlic cloves
1 tsp salt
Freshly ground pepper
80g pistachios
100g Azores Island cheese
120g evoo
200g Emmental cheese, grated
500g gluten-free Conchiglie tricolor

In a food processor place 1/3 spinach, garlic, salt, pepper, pistachios, cheese and 1/3 evoo. Process well until you have a smooth misture. Add another spinach and evoo 1/3 and process again. Repeat with the remaining spinach and evoo, taste and, if necessary, adjust the seasoning.
Meanwhile, boil the pasta in plenty salty water. Drain, return to the pan and mix with half of the pesto amount (keep the other half in the fridge for another meal). Sprinkle with the grated Emmental, season with more freshly ground pepper and serve.

Arroz de feijão, couve e morcela | Bean, cabbage and black sausage rice

Este arroz é tudo de bom. É o conforto que falta nos dias frios, chuvosos e cinzentos. É o abraço apertado daqueles que amamos. É as mãos enrugadas da avó Nandinha enquando escolhia escolhia os feijões. O sorriso dos meus pais.
Este arroz é a lembrança dos dias passados e dos que estão para vir. É o ritual terapêutico de demolhar e cozer feijão e sentir-me 25 anos mais nova (tempo para onde foste???) na cozinha da avó Nandinha. É o cheiro a cevada acabada de fazer em casa da avó Ana nas visitas de domingo. É o sorriso do babe (será sobrinho ou sobrinha?) que vai nascer em Abril.
Este arroz é tudo. Somos nós. E vocês.


Arroz de feijão, couve e morcela

1 cebola grande, picada
3 dentes de alho, picado
Azeite
1 morcela da Guarda, sem pele, fatiada
1 couve portuguesa, em juliana
8 bagas de zimbro
500g arroz vaporizado
350g feijão maravilha, demolhado e cozido em apenas água
Sal e pimenta

Num tacho largo suar a cebola com o azeite durante 5 mins. Adicionar o alho e dourar. Colocar as fatias de morcela no azeite e "fritar" de ambos os lados. Juntar a couve e saltear durante 5mins. Adicionar a água onde o feijão cozeu com água suficiente para perfazer 1,5L, o zimbro e temperar com sal e pimenta. Assim que ferver, adicionar o arroz e mexer. Após 10mins, juntar o feijão e deixar cozinhar. Rectificar os temperos antes de servir.


This rice is all that is good. It's the missing comfort in the cold, grey and rainy days. It's the warm embrace of the ones we love. It's grandma Nandinha's wrinkled hands while choosing beans. My parents smile.
This rice is the memory of the days gone by and the ones still to come. It's the therapeutic ritual of soaking and boiling beans to feel 25 years younger (time where art thou???) in grandma Nandinha's kitchen. It's the smell of fresh barley drink at grandma Ana's house on Sunday visits. It's the smile of the cute little baby (nephew or niece?) due in April.
This rice is all that. It's us. And you.


Bean, cabbage and black sausage rice

1 large onion, finely chopped
3 garlic cloves, finely chopped
Evoo
1 black sausage from Guarda, without skin and sliced
1 portuguese cabbage, Julianne cut
8 juniper berries
500g parboiled rice
350g wonder bean, soaked and boiled in water only
Salt e pepper

In a large pan, soften the onion in the evoo for 5mins. Add the garlic and mix until golden. Place the sausage slice and "fry" both sides. Add the cabbage and sautée for 5mins. Pour in the water from boiling the beans together with enough water to make 1,5L, the juniper berries and season with salt and pepper. Bring it to a boil add the rice, mixing and leave to cook for 10mins. Add the beans and finish cooking. Adjust the seasoning before serving.

Salada rosa de couscous | Couscous pink salad

Durante a semana há que tentar simplificar ao máximo as refeições sem no entanto descurar o sabor, a apresentação (porque os olhos também comem!) nem os nossos princípios nos que toca à alimentação.
A sugestão de hoje tanto pode ser um acompanhamento como pode perfeitamente servir de prato principal se lhe adicionarmos grão de bico cozido. Prepara-se num instante, portanto não há desculpas :)


Salada rosa de couscous

400g couscous sem glúten
Azeite
Sal marinho
Pimenta 5 bagas moída na hora
Água a ferver
300g beterraba cozida
1 romã (apenas os bagos)
250g queijo feta
80g pistácios
Vinagre de framboesa

Numa saladeira grande envolver o couscous com azeite, pimenta e sal. Adicionar água a ferver até tapar completamente o couscous. Reservar durante cerca de 5mins. Entretanto, partir a beterrada bem cubinhos pequeninos, cortar os pistácios ao meio e esfarelar o queijo feta. 
Mexer o couscous para soltar os grãos, adicionar a beterrada, os pistácios, o feta, os bagos de romã e temperar com vinagre e azeite. Mexer bem, provar e ajustar os temperos antes de servir.


During the week it's important to simplify the meals without loosing deliciousness, presentation (remember the eyes also eat!) nor our principles when it comes to food. 
Todays suggestions can be a side dish or can also be the main course if we add boiled chickpeas to it. It's ready in no time so there are no excuses :)


Couscous pink salad

400g gluten-free couscous
Evoo
Sea salt
Pepper freshly ground
Boiling water
300g boiled beet
1 pomegranate (just the berries)
250g feta cheese
80g pistachios
Raspeberry vinegar

In a large serving bowl mix the couscous with evoo, salt and pepper. Add the boling water until all the couscous is covered. Keep aside for 5mins. Meanwhile cut the beat in tiny cubes, the pistachios in halves and crumble the feta. 
Mix the couscous to loosen the grains, add the beet, pistachios, feta, pomegranate berries and drizzle with evoo and vinegar. Mix well, taste and adjust the seasoning before serving.

Strudel folhado de maçã, arandos e avelã | Puff-pastry apple, cranberry and hazelnut strudel

"A vida são dois dias". Ora pois devem estar a referir-se ao fim de semana. Sim. Esses dois dias que passam a correr. E nos quais tentamos herculeamente encaixar todo o tempo do mundo. Namorar. Passear. Cozinhar. Família. Amigos. Jardinar. Fotografar muito. Descansar. E quando damos por ela a vida a acabou. É segunda-feira e temos que ir trabalhar. Euromilhões, onde estás tu?


Strudel folhado de maçã, arandos e avelã

1 placa rectangular massa folhada sem glúten
4 maçãs reineta
100g arandos secos
Mistura de açúcar baunilhado e canela
Água

Retirar a placa de frigorífico e aguardar 15 mins. Entretanto, ralar as maçãs (com casca) e misturar com a farinha de avelã, os arandos e açúcar com canela a gosto. Estender a placa de massa folhada e espalhar o recheio de maçã, deixando uma margem por preencher num dos lados maiores). Enrolar a placa começando do lado oposto ao da margem e posicionar no centro do tabuleiro. Com uma faca afiada, fazer uns cortes na massa. Pincelar com água (ou ovo, ou leite) e, opcionalmente, polvilhar com mais açúcar com canela. Levar ao forno a 220ºC durante cerca de 45mins ou até a massa estar douradinha.

Friends. Gardening. Photographing a lot. Resting. And when we realize, life is over. It's Monday and we have to go to work. Euromillions, where art thou?


Puff-pastry apple, cranberry and hazelnut strudel

1 rectangular sheet gluten-free puff-pastry
4 Reineta apples (or any sour apples, such as Granny Smith)
100g dry cranberry
Vanilla sugar and cinnamon mix
Water

Remove the pastry from the frigde and keep aside for 15mins. Meanwhile prepare de filling by grating the apples (skin on) and mixing with the cranberries, flour and sugar mix. Open out the pastry sheet and cover with the filling, leaving a margin in one of the largest sides. Roll the pastry, leaving the margin to the outside, in order to close the roll and place in the middle of the baking sheet. Brush with water (or egg, milk, etc.) and, optionally, sprinkle with more sugar mix. Leave in the pre-heated oven at 220º C for 45mins or until golden.

Leite de avelã com chocolate | Hazelnut milk with chocolate

Em tudo na vida há alternativas. Cada decisão de tomamos é feita com base numa escolha, mesmo que por vezes de forma inconsciente. Se olhamos o céu cinzento e optamos pela liberdade de sair sem guarda-chuva. Se vamos pelo caminho mais rápido ou atravessamos o jardim para sentir o perfume das flores depois da orvalhada matinal. Se bebemos leite de vaca ou optamos por algo diferente. 


Leite de avelã com chocolate

1 medida de avelãs
4 medidas de água
Cacau em pó sem glúten

Mergulhar as avelãs em água durante pelo menos 12h. Escorrer, passar por água e colocar no liquidificador. Adicionar 4 medidas de água e triturar até obter um líquido leitoso e a avelã estar completamente ralada. Forrar um coador com um pano fininho (musseline) e apoiá-lo num jarro medidor. Verter a mistura no coador e coar bem todo o liquido, torcendo o pano ao máximo (no jarro fica o leite de avelã e no pano fica farinha de avelã). Aquecer o leite de avelã e juntar cacau a gosto.

Notas: Esta receita é extremamente versátil. Pode usar-se qualquer fruto seco (cajus, pistácios, amêndoas, etc.), qualquer adoçante (mel, agave, açúcar baunilhado, etc.) e qualquer sabor (chocolate, groselha, café, fruta (no caso de batidos), etc.). A farinha resultante deste processo pode ser aproveitada para bolos, pães, crumbles, granolas, etc..


For everything in life there's a choice. Each decision we make is based on a choice, even if done unconsciously. If we look at the grey sky but choose to leave home with the freedom of not carrying an umbrella. If we take the shortest way or if we stroll through the garden to smell the flowers with morning dew. If we drink cow milk or choose something different.

Hazelnut milk with chocolate

1 measure hazelnuts
4 measures water
Cacao (gluten-free powder)

Soak the hazelnuts overnight (12h). Drain, rinse and place in the blender with the 4 measures of water. Blitz until you have a milky liquid and the hazelnuts are ground. Line a strainer with cheese-cloth and place it over a measuring jar. Strain the milk, twisting the cloth to obtain the more liquid possible. Heat the milk and flavor with the cocoa to taste.

Notes: this recipe is extremely versatile. You can use any nut (cashews, pistachios, almonds, etc.), any sweetner (honey, agave, vanilla sugar, etc.) and any flavor (chocolate, gooseberry syrup, coffee, fruit (for smoothies), etc.). The resulting hazelnut flour/meal can then be used in cakes, breads, crumbles, granolas, etc..

Tapioca de chocolate branco com tangerina | White chocolate and tangerine tapioca

O dia perde-se entre nuvens negras e raios de sol. As horas passam lentas, vagarosas, agarradas a cada segundo como se fosse o último. E enquanto o tempo se entranha em todos os poros da nossa pele, vamos saboreando colher atrás de colher, apreciando cada detalhe desta sobremesa.


Tapioca de chocolate branco com tangerina

50g de tapioca
250ml de leite magro
100g de chocolate belga branco
1/2 tangerina (apenas a casca)
Pólen de abelha
Flor de sal

Deixar a tapioca de molho em bastante água pelo menos durante 2h (neste caso ficou durante a noite). Num tachinho, colocar a tapioca hidratada (e escorrida) com o leite e a casca de tangerina e levar ao lume. Cozer durante 5mins após levantar fervura (pode ser necessário adicionar mais um pouco de leite para ajustar a consistência). Retirar do lume e juntar o chocolate, mexendo sempre para derreter. Servir polvilhada com pólen de abelha e flor de sal.


The day looses itself amongst dark clouds and sunbeams. The hours slowly pass by, lingering in each second as if it was the last. And while time entrenches itself in our skin pores, we savor spoon after spoon, enjoying each detail of this dessert.



White chocolate and tangerine tapioca

50g tapioca
250ml skimmed milk
100g white belgian chocolate
1/2 tangerine (zest only)
Bee polen
Fleur de sel

Hidrate the tapioca with plenty water for at least 2h (mine stayed overnight). In a small saucepan, place the drained tapioca with the milk and tangerine zest. Cook for 5 mins after started boiling (it might be necessary to add more milk, depending on how you like your tapioca's consistency). Remove from the heat and add the chocolate, mixing until it melts completely. Serve sprinkled with the polen and fleur de sel.

Pudim de cacau e chia | Cocoa-chia pudding

Lá fora a chuva cai de mansinho. O céu cinzento, carregado, parece abater-se lentamente sobre nós. Cá dentro há conforto, calor, protecção. Há livros, música, filmes. Há pipocas salgadas, café fumegante, caixas de bombons. Cá dentro há de tudo um pouco. Há a parte de nós que quer que o fim de semana se prolongue nem que seja apenas por mais um minuto...


Pudim de cacau e chia
(adaptado de A Beautiful Mess)

4 c.sopa sementes chia
1 chávena leite de soja
2 c.sopa cacau
Pitada sal
Pitada canela
3 c.sopa mel multiflorar

Numa taça, misturar os primeiros 5 ingredientes. Misturar bem e refrigerar durante pelo menos 1h. Ao fim dos primeiros 30mins, voltar a mexer para evitar pedaços. Antes de servir, misturar o mel. Enfeitar com avelãs e pistácios grosseiramente cortados.

Cocoa-chia pudding
(adapted from A Beautiful Mess)

4 tbsp chia seeds
1 cup soya milk
2 tbsp cocoa
Pinch of salt
Pinch of cinnamon
3 tbsp multifloral honey

In a small bowl combine the first 5 ingredients. Give it a good stir and refrigerate for at least one hour. After the first 30mins give the mixture a stir to avoid lumps. Once you're ready to eat stir in the honey. Sprinkle with chopped hazelnuts and pistachios.

Iogurte de caju | Cashewgurt

O ano começou mas há hábitos de sempre que se mantém. Um bom pequeno-almoço é a melhor forma de iniciar o dia. E se, durante a semana, nem sempre há tempo para preparar esta refeição a preceito, ao fim de semana ele não nos escapa. E há sempre um pouco de tudo. E se por vezes revisitamos os clássicos, noutras perdemo-nos de amores pelas novidades que vamos descobrindo...


Iogurte de caju
(receita original de Green Kitchen Stories)

1+1/2 chávenas de cajus, demolhados overnight (8-12h)
2 c.sopa sumo de limão
10 c.sopa água
2 tâmaras demolhadas, descaroçadas
1 pitada de sal
1/2 c.chá psilio em pó + 1/2 chávena água

Misturar o psilio com a água, mexendo até engrossar. Colocar os cajus demolhados num processador de alimentos juntamente com o sumo de limão, água, tâmaras e sal e processar até obter uma pasta macia. Colocar a pasta numa taça e misturar bem com 2 c.sopa de gel de psilio. Dividir por duas taças e levar ao frigorífico por 10mins. Servir com compota de physalis e pólen de abelha.

And, if some days we return to the old faves, some other days we fall in love by new discoveries...


Cashewgurt
(original recipe by the Green Kitchen Stories)

1+1/2 cups raw cashew nuts, soaked overnight (8-12 hours)
2 tbsp lemon juice
10 tbsp water
2 soaked dried dates, pitted
1 pinch sea salt
1/2 tsp psyllium husks powder + 1/2 cup water

Combine psyllium husks powder and water in a small bowl and stir until it thickens. Place soaked cashew nuts in a high speed blender (or in a bowl and use an immersion hand blender). Add lemon juice, water, dates and sea salt and blend until completely smooth. Pour into a bowl and add 2 tbsp psyllium gel and stir to combine. Scoop into two serving bowls or glasses, chill in the fridge for 10 minutes. Serve with physalis jam and bee polen.
