A culpa é dos figos! | Blame it on the figs!

Gluten-free Pancakes with figs, roquefort, honey and pistachios - iPhone 6 @ http://instagram.com/ondina_maria/

(scroll down for English)

E deu nisto!

Panquecas com figos, roquefort, mel e pistácios

Figos
150g de queijo roquefot
Mel a gosto

Dear readers: just a quick notice to let you know this recipe was forgotten unpublished since the end of summer. On that note, please be reminded that the fig season will be back!!! Meanwhile, you can always enjoy the dried figs :p

It's that time of the year when figs are kings. And, obviously, I had figs at home staring at me so I cooked almost everything with them: salads, ice-cream, mascarpone cream with Port, chia pudding, and so on. We better enjoy for fig season disappears in the blink of an eye! Last weekend I woke up from dreaming with pancakes, figs and roquefort (yes, I dream with food very frequently) so I jumped out of bed and under a scorching heat I prepared my gluten-free pancake recipe and stood by the mini frying pan until all the batter was done. And this is the result!

Pancakes with figs, roquefort, honey and pistachios

Figs
150g of roquefort cheese
Honey to taste
Chopped pistachios

After cooking frying the pancakes, smear them with the roquefort, top with the quartered figs, drizzle with honey and sprinkle with the pistachios. Stack 3 pancakes and enjoy.
Easier and more delicious would be impossible!

Fofas e crocantes | Fluffy and crunchy

Gluten-free Pancakes - iPhone 6 @ http://instagram.com/ondina_maria/

(scroll down for English)

250g amido milho
2 c.sopa linhaça moída
2+1/2 c.chá fermento em pó sem glúten
80g açúcar de coco
2 ovos
375ml leite magro
70g manteiga derretida

Well, well... back to pancakes. They are a staple from the lazy late weekend brunches and are for all, which basically means gluten-free!
The toppings are to our liking, a savory version is easy to prepare, ando so on. But for me they are perfect just like this, simple and on their own, as they are crunchy on the outside and fluffy on the inside :D

Pancakes (gluten-free)

250g cornstarch
2 tbsp flaxmeal
2+1/2 tsp gluten-free baking powder
80g coconut sugar
2 eggs
375ml skimmed milk
70g melted butter

Place all the liquid ingredients into a liquifier and blitz. Add the dry ingredients and blitz again. Keep the batter aside for around 20-30mins.
On a non-stick frying pan, in a medium-high heat, pour portions of batter and cook until the upper side is nearly solid and bubbly (around 2 to 3mins). Carefully turn the pancakes and finish cooking (about 1min more). This recipe makes 16 pancakes.

Chocolate raspberry fondants - iPhone 6 @ http://instagram.com/ondina_maria/

(scroll down for English)

Even though we are entering the Xmas season with all its excesses, I had to share with you these delicious fondants that might well be an alternative for those who, like myself, are not very fond of Xmas sweets, especially the fried ones. No, go into your kitchen and bake these beauties. Then come and tell me how good they are. Who's your friend?

Chocolate raspberry fondants
(inspired by Maizena)

200g chocolate 85% cocoa
100g chocolate 70% cocoa
200g butter
200g coconut sugar
150g corn maize
5 large eggs
1 gluten-free baking powder
36 raspberries

Chop the chocolate and butter into pieces and melt them in a large bowl in the microwave in the maximum potency for 1,5mins. Remove and mix thoroughly with a fouet. Add the coconut sugar and mix well. Add in the maize and baking powder and fully incorporate. Fold in the eggs. Pour a generous tablespoon of chocolate batter into 12 muffin molds. Add two raspberries and fill in all the molds with the remaining batter. Top each mold with one raspberry and leave in the pre-heated oven at 200ºC for 8 to 10mins. Leave to cool down before removing from the molds. Serve with raspberry coulis and with Chunky Banana Bread Granola.

Flourless chocolate cake - iPhone 6 @ http://instagram.com/ondina_maria/

(Scroll down for English)

Gluten-free baking is not always easy and finding alternatives for classics sometimes means a lot of research and failed attemps before we get a delicious result. But that is not the case for this cake, a classic in our house for quite some years.
The cake rises a lot but, as soon as it comes out of the oven, starts to sink hence the clumsy look. It is a dense, embodied and soft cake, with a strong chocolate flavour, and a crunchy crust. It is indulgent and tempting so I'm quite sure no one will be able to resist it!

Flourless chocolate cake

300g chocolate 85% cocoa
175g butter
200g coconut sugar
5 eggs
6 tbsp crème fraîche

In the thermomix mixing bowl place the butter, sugar, eggs and crème fraîche and mix for 5mins at 70ºC on speed 4. Add the chopped chocolate, wait a few seconds for it to soften and then mix for 20s on speed 5. Pour the batter into a greased spring-form tin and place in the pre-heated oven at 180ºC for 45mins. Leave to cool down before removing from the mold. Sprinkle with powdered cacao and serve.

150g carolino rice
4 stripes of lemon zest (the yellow only)
1 cinnamon stick
1 pinch of salt

Bolo triplo de Nutella e panquecas de avelã | Triple layer Nutella and hazelnut pancake cake

(scroll down for English)

Gratidão. Imensa.

Feliz 2014 :)

Bolo triplo de Nutella e panquecas de avelã

1 chávena avelãs inteiras
2 c.sopa açúcar baunilhado
1+1/2 chávenas farinha T-55
2 c.sopa fermento em pó
1 c.chá sal
50g Becel líquida
1 chávena Kefir
2 ovos XL, temp. ambiente
1 c.chá aroma de baunilha
Nutella
Avelãs cortadas
Crocante de amendoim

Tostar as avelãs numa frigideira. Remover do lume e deixar arrefecer.
Empilhar as panquecas e servir.

Gratitude. Immesurable. This is how we end 2013 and beggin 2014.
Grateful for all the good things that happened to us. And also for the lesser good ones as we always learn some valuable lesson from it. As in "what doesn't kill you makes you stronger".
Grateful for the people of our heart that proudly walk side by side with us, helping us grow and becoming better persons. Grateful for the new people, whom we hope are here to stay. Grateful for the ones who parted ways, as they were not meant to be.
Grateful for the bright sunny days and for the stormy and rainy ones.
Grateful for the health of all those we love and who love us back.
Grateful for the all the holidays and trips, alone or in good company, for the great discoveries, for the breathtaking landscapes and for the delicious meals.
Grateful for all the experiencies and for accomplishing many of the proposed goals.
Grateful for the good surprises that came our way, making us oh so very happy.
And very grateful for having you, on the other end of the screen whom, many times, come into our lives in the form of comments, suggestions, messages, phonecalls, gatherings and trips.

Happy 2014 :)

Rabanadas grelhadas | Grilled French Toasts

(scroll down for English)

3 laranjas (sumo)

Xmas is just around the corner. Soon we'll be together, gathering around a table with plenty delicacies. Family traditions that pass from generation to generation or new ones that start to rise. We will tucked in, with hugs and smiles, in a warm house where there's a bit of everything. I wish everyone could just say the same thing...
The holidays are an invitation for gluttony and if some of us are a bit more controlled, others may not be so. For those who seek a healthier alternative without giving up on much, here's a recipe for grilled French Toasts (Rabanadas, in Portuguese). Yes, grilled. But the flavor is all there.

Grilled French Toasts

500ml skimmed milk (or soya, almond, rice, etc.)
1/2 small bio lemon (zest)
2 cinnamon stick
Honey to taste (agave syrup, or brown/moscovado sugar)
2 eggs, beaten
8 thick gluten-free whole bread (at least two 2 days old) slices
Brown sugar and cinnamon mix to sprinkle

3 oranges (juice)
Port wine (same amount as orange juice)
2 aniseed stars
1 cinnamon stick
Brown or moscovado vanilla sugar (or honey, agave syrup, etc.)

Boil the milk with lemon zest, cinnamon and honey. Keep aside. Beat the eggs and slice the bread. Meanwhile, heat a anti-adherent frying pan just greased with olive oil. Dip the bread in the milk until tender. Pass each slice by the beaten eggs and grill in the pan until golden on both sides. Sprinkle all slices with the sugar and cinnamon mix and place them in a large dish or large bowl.

If you like, serve the French Toasts with a syrup: boil the orange juice with Port, aniseed, cinnamon and vanilla sugar. Drizzle the French Toasts with the syrup or keep the syrup aside in a gravy boat so each person can choose between dry or moist French Toasts.

Hamburgueres aromáticos de couve-flor | Cauliflower aromatic burgers

(scroll down for English)

4 ovos
Iogurte grego q.b.
Micro-rabanetes Life in a Bag

In our home meals are weekly planned and of the seven dinners three are vegetarian, two are fish and the other two are meat, one read meat and one poultry (lunches are the recycling of our dinners).
Of course the weekly plan does not have to be strict: it is adaptable to our wishes, to the time we have available due to our working schedules and, many times, it is adaptable to all the generous offerings from family and friends.
Like in all houses, we repeated our favorite dishes over and over again, alongside with new ones that, sometimes, become new favorites. Like these vegetarian burgers, delicious at any time of the year and perfect for the lunchbox!

Cauliflower aromatic burgers

1 cup boiled quinoa
1 cup grated cauliflower
4 eggs
1/2 cup ground gluten-free oats
1 cup grated feta cheese
Salt and freshly ground pepper
1 tbsp dried mint
1 tbsp cried coriander
1 tbsp coriander paste
Greek yoghurt
Micro-raddishes Life in a Bag
Whole-wheat gluten-free beet bread

Beat the eggs in a large bowl and add the quinoa, cauliflower, oats, feta, the herbs and season with salt and pepper. Mix well and leave in the fridge for at least 30mins before cooking.
Grease a frying pan with olive oil and heat well. Pour 2 tbsp of batter for each burger and cook them until golden and firm to flip and finish cooking.

Bolo decadente de chocolate | Decadent chocolate cake

(scroll down for English)

The day starts early. The weak light, filtered by the clouds, softly invades the house, in a morning slumber. The light, always the light that draws silhouettes at each time of the day and makes me want to breathe it all in without blinking. Not wasting even one thousandth of second of that light, that begins tenuous and blueish, that grows and becomes nearly glaring only to loose its blaze and bid farewell to us in a blushed goodbye.

The mountain range awaits us, with its healthy chill air invading our lungs. The shining sun, that no longer warms us up and sometimes timidly hides behind a cloud, reflects in the stones and waters, as if the ground we step is is made of gems and precious stones. The greens, browns, yellows and reds curl against the fainted blue sky. There's a mist that transports us into an endless faery tale.

Back home, we warm up our hands in a bowl of pumpkin soup together with a tapenade, cottage cheese and freshly ground pepper tartine. And, because there are always happy endings, a slice of this decadent, moist and dense chocolate cake awaits us.

Decadent chocolate cake
(adapted from this recipe from Donna Hay)

250g butter
200g brown sugar
3 eggs
300g plain (all-purpose) flour
1½ tsp baking powder
35g cocoa powder
250g greek yoghurt
250g dark (72%) chocolate, melted

Place the butter and sugar in the bowl of an electric mixer and beat until light and creamy. Add the eggs, one at the time, and beat well. Sift the flour, baking powder and cocoa over the butter mixture, add the greek yoghurt and chocolate, and mix until just combined.
Pour the mixture into a greased round cake tin and bake in a pre-heated oven to 160º C for 55 minutes (or until just set). Let it cool in the tin and serve sprinkled with cocoa powder.
